Paper Cup Frozen Salad

2 cups sour cream
2 Tbs. lemon juice
1/2 to 3/4 cup sugar
1/8 tsp salt
1 8 1/2 oz can crushed pineapple
1 banana, diced
Red food coloring to give a pink tint

Mix together the above, then lightly fold in:
1/4 c. chopped pecans
1/2 cup chopped maraschino cherries

Spoon into fluted paper muffin cups placed in muffin pans. Freeze, covered with plastic wrap. Store in freezer. Remove from freezer 15 minutes before serving to loosen paper cups. Serve on lettuce leaf.
